'Chuka Chimaki' Chinese Style Steamed Flavored Sticky Rice
‘Chuka Chimaki’ Chinese Style Steamed Flavored Sticky Rice
Ingredients: Makes 10-15 small servings
10-15 Dried Corn Husk
3 C Mochi rice (sticky rice)
3 dried shiitake mushrooms soaked
1/4 gobo
1/4 carrots
2TBS shoyu
21/4 C vegetarian dashi, broth
1 TBS sesame oil
1 TBS oil
1 TBS Hacho miso (or red miso)
1TBS mirin
1/2 tsp salt
Grated ginger about 1tsp (optional)
*May add other vegetables, nuts, goji berries etc.
Preparations:
Soak the rice overnight and drain the water.
Chopped the vegetables and shiitake. Save the water from the Shiitake
Prepare 2 cups of shiitake dashi (add water other broth if not enough)
Soak the corn husk in a hot water for at least 30 minutes.
*Mix all seasonings well before adding to the rice mixture
Procedures:
Saute the vegetables with oil and sesame
oil add half of the shoyu, mirin.
Add the rice and saute until the
rice becomes half transparent about 10 minutes.
Add the broth and the rest of the seasoning.
Cover the skillet and cook about 15
min or until done on low heat.
Cool the rice.
Wrap in corn husk.
Steam for about 15 minutes on high
heat.
Serve.
