Side Dish: Miso dressing with cooked vegetables



Miso Dressing with three vegetables




Ingredients

Vegetables:

Cauliflower
Broccoli
Asparagus or green beans


Sauce:  refer to Miso dressing


Miso 2TBS
Sake 2TBS
Mirin 2tsp
Sugar 2 tsp
Sesame oil 1tsp

makes about 100cc, 7TBS


How to cook vegetable to right consistency....crunchy but cooked








For about 2 C of vegetable cut into small pieces, small florets for broccoli and cauliflower

Boil about 3 Cups of water.
Add a pinch of salt.

When the water is boiled first add broccoli, in about 30 seconds, add cauliflower, and wait 30 seconds and finally add the asparagus. Keeping it boiling for 1 minute.

Drain



Cool (then keep them in the refrigerator until serve)

*Do not pour  cold water to cool as the vegetables becomes watery.

Marinate with about half of the sauce and serve.
(add more if needed)

This dish is very good as a side dish.
