Kaeshi, the simple soup base for noodles



'Kaeshi' the base sauce for various noodle soups, dipping sauces. I keep this in my refrigerator and surely makes the cooking process very easy and fast!

「かえし、(煮かえし)」'kaeshi' literally means to boil over, to cook over as the mirin is once cooked in order to evaporate the alcohol to enhance good, sweet flavor.


Dipping sauce for soba-meal with a shiitake mushroom.



Ingredients:

Mirin 1/2C
Soy sauce 1/2C

Procedures:
Measure and pour mirin into a saucepan and turn the stove to medium-low.
Leave it on the stove for a couple of minutes to let the alcohol evaporate.

Add soy-sauce. Keep the saucepan on the heat until mirin-soy sauce mixture is warm.



Do not boil.

Vegetarian Condiments

Store in a glass jar in a refrigerator.
Keeps for several months.

How to use Kaeshi

Just dilute the kaeshi with your favorite dashi-broth/vegetarian dashi-broth.
Good for udon, soba, somen, and even for nishime(simmered vegetable dish).

For somen dipping sauce  kaeshi:dashi=1:1
